CORKY’S SEASONED GREEN BEAN BUNDLES

These bundles are a great make-ahead dish for a large dinner party or for a Thanksgiving meal. You can prepare one to two bundles per guest, assemble the whole thing the day before (or freeze a few weeks ahead), and pop it into the oven just before dinnertime. The green bean bundles can also be grilled over medium heat. Place on the grill and watch carefully, as bacon grease can cause flare-ups, or wrap in foil. They’re ready when the bacon is done. Note that you will need toothpicks for this recipe.

  • 1 teaspoon Corky’s Bar-B-Q Dry Rub, divided
  • 2 pounds fresh green beans, washed and ends trimmed, or 2 (14.5-ounce) cans whole green beans
  • 8 slices bacon, cut in half crosswise
  • 1/4 teaspoon garlic salt
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 3 tablespoons packed brown sugar
Cooking Instructions

Preheat the oven to 350°F. If using fresh beans, bring a pot of water with 1/2 teaspoon dry rub to a boil; add the beans and cook until crisp-tender, about 6 to 8 minutes. Drain and let cool until cool enough to handle.

Bundle approximately 6 freshly blanched or canned beans together, wrap with a half slice of bacon, and secure with a toothpick. Place the bundles in a 13 x 9-inch baking dish. (Can be prepared ahead of time. Refrigerate or freeze the bundles until ready to use.)

Sprinkle the bundles with garlic salt and remaining 1/2 teaspoon dry rub. Pour the melted butter over the bundles and then sprinkle with brown sugar. Bake until the bacon is done and the beans are warm, about 15 to 20 minutes.
